BREAKFAST SCRAMBLE

Lately I have been aiming to eat more clean meals. I recently tried this recipe (by me) and it is so easy and delicious! It takes 10 minutes or so. 3 simple ingredients, create a super yummy, healthy meal!


You will need: 
  • 2 eggs
  • 1 cup Trader joes fire roasted diced tomatoes (or you can cut your own)
  • 2 handfuls Baby spinach 
  • 2 tablespoons olive oil
  • A large stainless steel frying pan
  • Spatula
  • Medium sized bowl + whisk 
Directions: 
  1. Take your eggs and crack them into the bowl. Do not add any milk, cream, or butter. We are just doing scrambled eggs. Whisk them until the yolk and egg whites have blended.
  2. Add the tomatoes to the eggs. 
  3. Set your frying pan to medium/high heat. Add the olive oil to the pan, spreading it around so that it covers the surface completely. 
  4. Add the egg and tomato mix to the pan.
  5. Immediately after, add your baby spinach.
  6. Let the egg mixture sit for 2-3 minutes. After that time has passed, or it is sizzling, you may start folding it over. 
  7. Keep mixing around the food until your spinach has softened and your eggs are cooked through. 
  8. Serve hot with some lemon juice. 

I love how moist my eggs turn out. It pairs really well with orange juice. This is mostly due to the tomato juice. I especially like this dish in particular because it is very simple and gives me an easy way to get the nutrients I need and to start off my day right. Hope you guys give it a try!!
